I just finished compiling OO and it did take a very long time. I want to download and install the new Toorox and would prefer not to lose my newly compiled version of OO. Is there a way to save it? How would I go about doing that?

Yes, you can use quickpkg to build a binary package:
quickpkg openoffice
Then you will find it in /usr/portage/packages

To install that package type in:
emerge --usepkg openoffice
